Focaccia
Made with mashed potato, topped with olive oil, sea salt, fresh thyme and oregano. It was meant to be a snack but was so tasty it ended up being dinner. And then breakfast this morning too.
The recipe came from the cookbook that came with the Kitchen Aid - some good stuff in there!
500g mashed potatoes 500g strong white flour 4 tbsp olive oil 7g dry yeast 2 eggs 1 tsp salt
Mix into a smooth dough, divide in 2 and shape into 2x 20cm greased cake tins. Lightly cover and rest for 3 hours. Brush with olive oil and top with cherry tomatoes (halved or quartered), sprinkle with salt, chopped oregano and/or thyme. Bake at 180 for 30 mins. Voila!
Thanks so much Susan will certainly give it a try. I'm in the process of purchasing a food processor and wondering how you've found the kitchen aid? I've read so many reviews and its all a bit overwhelming.
I love the kitchen aid, fantastic for dough and cakes, very heavy duty and easy to clean. I haven't bought all the various attachments for it yet, so I am sure it will have more uses when I do. I also like our Cuisinart food processor/blender, but the bowl capacity of ours is too small. Often need to do 2 or three separate batches to chop everything finely or blend soup etc.

that looks beautiful, i might try that too, i finally have some red tomatoes that would be yummy on top
